Banana Pancakes

Time: 10 Minutes

Difficulty: Easy!

 

 

I have had the pleasure of enjoying these for a Sunday morning breakfast myself, and they really are just so so delicious.

Throw some blueberries or strawberries on the top or even just a bit of syrup, you’re looking at a winner.

The best part is, they’re not actually bad for you! Great way for kiddies to get all loved up with their fruit! (Even if it is a ‘treat’!)

 

INGREDIENTS:

  • 1 & ½ Cups Self Raising Flour
  • 1 Big or 2 Small Bananas (mashed up, I use a fork!)
  • 2 Eggs
  • ½ Teaspoon Vanilla Extract
  • 1 Teaspoon Maple Syrup
  • 1 Tablespoon Vegetable Oil
  • 1 Cup Milk (or milk alternative i.e. almond, soy, rice)

 

METHOD:
Mix together the following in a large bowl:

  • 2 Eggs
  • Mashed Banana
  • Vanilla Extract
  • Maple Syrup
  • Milk

Add flour Gradually - you may find you need to add some extra if the end mixture is too runny, so keep an eye on it. Alternatively, you can add only half the milk and once you have added the flour you can gradually add the rest of the milk until you’re happy with the consistency!

Cook in a pan with either butter or oil, serve with berries and syrup! YUM!

(I tried this with ricotta and honey this morning! so good!)
